Ingredients:


2 cups of basmati rice

1 lb of chicken (or lamb or beef)

2 large onions, thinly sliced

2 tomatoes, diced

4 cloves of garlic, minced

1 inch piece of ginger, grated

2 bay leaves

4 cardamom pods

4 cloves

2 cinnamon sticks

1 tsp cumin seeds

1 tsp coriander powder

1 tsp red chili powder

1 tsp turmeric powder

1 tsp garam masala powder

1/2 cup yogurt

1/2 cup fresh cilantro, chopped

1/2 cup fresh mint leaves, chopped

4 tbsp vegetable oil

Instructions:


Rinse the basmati rice several times until the water runs clear. Soak the rice in water for 30 minutes.


In a large pot, heat 4 tbsp of vegetable oil over medium heat. Add the sliced onions and fry until they are golden brown. Remove half of the onions and set them aside for later.


Add the bay leaves, cardamom pods, cloves, and cinnamon sticks to the pot and fry for 1 minute.


Add the garlic and ginger and fry for another minute.


Add the diced tomatoes and fry until they are soft and mushy.


Add the cumin seeds, coriander powder, red chili powder, turmeric powder, and garam masala powder. Fry the spices for 1 minute.


Add the chicken (or lamb or beef) and fry until the meat is browned on all sides.


Add the yogurt, fresh cilantro, and fresh mint leaves. Stir well.


Drain the rice and add it to the pot. Stir gently to combine.


Add enough water to the pot to cover the rice by about 1 inch.


Add salt to taste.


Bring the mixture to a boil.


Reduce the heat to low, cover the pot, and simmer for 20-25 minutes or until the rice is fully cooked and fluffy.


Garnish the biryani with the remaining fried onions and serve hot with raita (a yogurt-based condiment) and/or a side of salad.
